Having to work so much I do not exactly have enough time during the day to do as much cooking and baking as I'd like. But, sometimes, all it takes is a couple quality ingredients to make a wonderful meal. For this salad I just stopped by Trader Joe's and picked up some of their juicy peaches and my favorite champagne pear vinaigrette dressing, and then added some feta, spinach and cashews. Afterwards, a not so patient me loved the instant gratification this meal provided. Quick, easy, and delicious is my favorite combination.
